Every year we create a new flavour to celebrate the christmas season, and we trial and test many combinations to make sure it’s perfect!
This year we have combined coconut and sunflower seed to create a crunchy base, sweetened with dates and spiced with nutmeg, cardamom and ginger. The filling is our raw take on ‘white chocolate’ with coconut milk, vanilla bean, sea salt and sweetened with rice malt syrup. Cherries sit in the filling, and we garnish with more fresh seasonal cherries, crunchy chopped pistachio and coconut. We drizzle the edges with a caramel sauce with a pinch of fresh ginger.
These cakes are a virtuous, delicious and wholesome way to celebrate christmas. Perfect as a gift for clients or family, or simply keep it at home to pull out at christmas lunch.
Any leftovers will keep for one week refrigerated or you may freeze for up to three months.
