You know those nights you commit to making a salad for your friend’s dinner party, and it gets to the day and you really don’t have the time – nor have any idea what you are going to make! Enter: this salad. It’s quick, easy, hassle free, delicious and impressive. Throw a few edible flowers on top for extra colour and wah-lah – dinner party ready!
Ingredients
1 head of cos, shredded lengthwise
4 red radish, thinly sliced (use a mandolin if you have one)
15 pea pods, peas removed
1 avocado, halved and sliced
1 handful of fresh mint leaves, slightly crushed
Dressing
1/2 cup extra virgin olive oil
1/3 cup apple cider vinegar
Juice of 3 limes
1 clove garlic
3 kaffir lime leaves
1 tbsp coconut sugar
Method
Arrange cos leaves on a large platter. Arrange the rest of the ingredients on top.
Place all dressing ingredients in blender, and blend until kaffir lime leaves are fully blended. Drizzle over salad. I always crack some pepper and a pinch of salt at the end.
